A couple of days ago I shared my article in Crush online magazine (here). The article is centered around tea and using it as an ingredient in cooking. I opted for desserts mainly because I have a ridiculously sweet tooth and will jump at the chance to bake any sort of sweet thing.

I’ve always wanted to try and make crème brûlée but have never (and still don’t) own a blowtorch. I was then trawling the internet for chai tea anything (another one of my favourites) and came across this recipe for chai tea crème brûlée – and it didn’t require a blowtorch!

I must admit I was rather nervous at caramelizing the sugar topping as sugar is flammable and I was paranoid that I was going to set the kitchen alight. So if you are going to attempt this recipe, please do be cautious and watch your custards in the oven when it is time to caramelize the sugar topping as the ramekins need to sit very close to the grilling element in the oven. A recipe for disaster if you don’t pay attention!

Fire hazard aside, this was a great tasting dessert. The custard was smooth, creamy and light, everything I like in a crème brûlée. There is a subtle hint of chai tea which is just lovely – it gives a great twist to this classic.

The chilling time is extensive so allow ample time for the custards to set.
